Cream of Peanut Soup
Ingredients:
1 stalk celery, chopped
1/2 medium onion, chopped
2 tbsps butter or margarine
1 1/2 tbsps PILLSBURY BEST® All Purpose Flour
4 cups chicken broth
1 cup LAURA SCUDDER'S® Old Fashioned Smooth Peanut Butter
1 cup milk
Snipped chives

Directions:
1. COOK celery and onion in butter or margarine in a medium saucepan until onion is tender, but not browned.
2. ADD flour, stirring until well blended.
3. ADD chicken broth, cooking until thickened and bubbly.
4. REMOVE from heat and rub through a sieve.
5. ADD the peanut butter and milk, stirring to blend thoroughly.
6. HEAT through, but do not boil.
7. SERVE hot or cold. Garnish with snipped chives.

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 6 Cups
