Dixie Peanut Butter Pie
Ingredients:
3/4 cup dark corn syrup
1/4 cup LAURA SCUDDER'S® Old Fashioned Smooth Peanut Butter
3 eggs
1/4 cup sugar
1 tsp vanilla
1/8 tsp salt
1/2 cup coarsely chopped peanuts
1 unbaked 8-inch pastry shell
Whipped cream (optional)

Directions:
1. HEAT oven to 425º F.
2. BLEND corn syrup and peanut butter in a medium mixing bowl.
3. MIX in eggs, sugar, vanilla and salt, gradually until smooth.
4. ARRANGE chopped peanuts on bottom of unbaked pastry shell. Pour peanut butter mixture over peanuts.
5. BAKE in 425º F oven for 10 minutes.
6. REDUCE heat to 350º F and bake for 25 minutes longer.
7. COOL. Garnish with whipped cream and additional chopped peanuts if desired.

Preparation Time: 20 minutes
Cooking Time: 35 minutes
Makes: 8 Servings
