Peanut Butter And Jelly Muffins
Ingredients:
1/2 cup LAURA SCUDDER'S® Old Fashioned Smooth Peanut Butter
1/2 cup SMUCKER'S® Seedless Strawberry Jam or SMUCKER'S® Strawberry Preserves
2 cups PILLSBURY BEST® All Purpose Flour, sifted
1 tbsp baking powder
1 cup milk
2 eggs
1/2 cup sugar
1 tsp salt

Directions:
1. HEAT oven to 400º F. Stir together flour and baking powder in medium bowl.
2. PLACE milk, eggs, sugar, peanut butter and salt in a blender or food processor, blending to combine. Pour over dry ingredients. Stir just to moisten.
3. LINE a muffin pan with paper muffin cups. Fill the lined cups 1/3 full. Place about 1 teaspoon of jam or preserves in the center of each muffin. Fill muffin cups with additional batter until 2/3 full.
4. BAKE 15 to 20 minutes. Remove from the oven and allow to cool in the pan, about 5 minutes.

Preparation Time: 25 minutes
Cooking Time: 15 minutes
