  • 2 pounds beef stew meat, cut into 1-inch cubes
  • Salt and pepper
  • 2 tablespoons Canola Oil
  • 1 cup chopped onion
  • 3 to 4 cloves garlic minced
  • 1 cup chopped green pepper
  • 1 cup chopped carrots
  • 1/2 cup Laura Scudder's® Old Fashioned Smooth Peanut Butter
  • 2 cups beef broth
  • 1 (14 1/2 oz.) can diced tomatoes
  • 1/2 teaspoon dried thyme
  • 1 bay leaf


  • Step 1

    SEASON meat with salt and pepper. Heat oil in large saucepan over medium heat. Brown meat on all sides. Add onion, garlic, green pepper, and carrots. Cook and stir until onions are translucent.

  • Step 2

    WHISK peanut butter and beef broth in medium bowl until blended. Pour over meat. Stir in tomatoes, thyme and bay leaf. Bring to a boil. Reduce heat to low. Simmer, stirring occasionally, about 1 1/2 hours or until meat is tender. Remove bay leaf and discard. Season to taste with salt and pepper.
