Cucumber Peanut Butter Bites

  • 1 English cucumber
  • 3 tablespoons Laura Scudder's® Old Fashioned Smooth Peanut Butter
  • 2 tablespoons light mayonnaise
  • 1 tablespoon chopped red pepper


  1. CUT portion of cucumber into eight 3/4-inch thick rounds. Remove centers with spoon or small melon baller until thin layer of cucumber remains in bottom.
  2. STIR together peanut butter and mayonnaise. Fill center of cucumbers with mixture using melon baller. Top with pieces of red pepper.
