Ingredients

  • 1 English cucumber
  • 3 tbsps. Laura Scudder's® Old Fashioned Smooth Peanut Butter
  • 2 tbsps. light mayonnaise
  • 1 tbsp. chopped red pepper

Directions

  • Step 1

    CUT portion of cucumber into eight 3/4-inch thick rounds. Remove centers with spoon or small melon baller until thin layer of cucumber remains in bottom.

  • Step 2

    STIR together peanut butter and mayonnaise. Fill center of cucumbers with mixture using melon baller. Top with pieces of red pepper.
